Ingredients
- 3 cups of all-purpose flour (360 grams)
- 1 teaspoon of baking soda
- Half a teaspoon of salt.
- 1 cup of softened butter. (About 225 grams)
- 1 and a half cups of white sugar. (About 300 grams)
- 2 eggs.
- 1/4 cup of lemon juice.
- Half a teaspoon of vanilla extract.
Procedure
1: Preheat your oven to 175 degrees Celsius or 350 degrees Fahrenheit.
2: Whisk together the baking soda, salt and flour until completely combined.
3: In another mixing bowl, beat the sugar and butter with an electric mixer until creamy (about five minutes), then add the eggs into the mixture ONE BY ONE. Only add the second egg once the first is combined fully.
4: After both eggs are completely mixed through, slowly add the lemon juice and vanilla extract. Mix the combination more until all the ingredients are incorporated.
5: Mix your flour and baking soda mixture to your butter and sugar mixture. Mix again until everything is incorporated.
6: Chill inside your fridge for half an hour.
7: Scoop about one and a half teaspoon of the dough and gently form into a ball. Place your dough balls onto a non-stick cooking spray / flour covered baking sheet, about two to three inches apart.
8: Bake the dough balls in the preheated oven until the cookies are set and just beginning to turn brown at its edges. This will take approximately 8 to 12 minutes.
