I wanted to broaden the horizons of what I wrote about. Travel is awesome, and I will be continuing to post about travel on the Euan Suarez Blog. However, I will also be posting book reviews and stories of my own on the blog, in addition to posting my thoughts on things interesting to me.

EATS: {Recipe} Toast Skagen!

Today is Sweden's National Day, so I decided to make something really Swedish: Toast Skagen!
- Ingredients - (Serves 4)
-500 grams, peeled prawns, cooked
-1/2 red onion
-3 teaspoons of extra virgin olive oil
- 1/2 lemon, zest and juice
- 5 tablespoons of sour cream
- Soft white bread
- Butter
- Dill
- Salt (for tasting)
- Procedure -
1. As the prawns we bought were frozen, we quickly dipped them into boiling water first.

Another couple of days off of school and my friend Linh and I went to the small but cozy town of Vaxholm, just over thirty kilometers away from Sweden's capital city, Stockholm.
We used our SL cards to use the tunnelbana (the subway system) to Tekniska Högskolan (in the red line towards Mörby Centrum) before we changed to Bus number 670 to Vaxholms...

Located near the Stockholm Public Library is the Stockholm Observatory, located at the peak of the hill at Observatorieparken.
A couple of weeks ago, my friends Lisa, Linh and their younger siblings had a picnic on one side of the observatory. I have been to the Observatory countless amount of times, and I have never been disappointed with my climb.
We had a picnic near this statue, just overlooking the public library itself.

For 2014's Mother's Day, we took mom to Stockholm Fisk, one of her favorite restaurants since our stay here in Stockholm.
As we were perusing their interesting menu, we got greeted by a complementary basket of bread and butter.
I got the white asparagus with French goat cheese and Iberico Berotta. White asparagus is a rarity in Europe, and is grown only for a short period of time. I have tried white asparagus before, and I did not enjoy...

The Karlberg Castle (Solna)

A day went pass and I thought, "Why not take a walk with my family?". After a quick fifteen minute Google search, I stumbled upon the Karlberg Castle - a castle in Solna which was a mere six kilometers away from where we lived.
We packed some water bottles, wore our jackets and off we went.
After arriving, we got to see a small dock where we got to sit and take pictures of the castle. Check it out!
