EATS: {Recipe} Toast Skagen!

Today is Sweden's National Day, so I decided to make something really Swedish: Toast Skagen!


- Ingredients - (Serves 4)

-500 grams, peeled prawns, cooked
-1/2 red onion
-3 teaspoons of extra virgin olive oil
- 1/2 lemon, zest and juice
- 5 tablespoons of sour cream
- Soft white bread
- Butter
- Dill
- Salt (for tasting)

- Procedure -

1. As the prawns we bought were frozen, we quickly dipped them into boiling water first.

2. Chop the onion finely and mix them into a bowl together with the prawns.

3. Add the chopped onion, lemon juice and zest, sour cream and olive oil into a bowl. Mix until the prawns are coated!

4. Put a large frying pan onto high heat before putting cubes of butter on the pan.

5. Put one slice of white bread on the butter covered pan to toast it. Flip the bread so both sides get covered with butter.

6. Apply some of the prawn mixture on the bread and lightly add some dill or salt to taste!

EATS: Stockholm Fisk

For 2014's Mother's Day, we took mom to Stockholm Fisk, one of her favorite restaurants since our stay here in Stockholm.

As we were perusing their interesting menu, we got greeted by a complementary basket of bread and butter.


I got the white asparagus with French goat cheese and Iberico Berotta. White asparagus is a rarity in Europe, and is grown only for a short period of time. I have tried white asparagus before, and I did not enjoy it. I don't enjoy asparagus in general - white or green. 


Impressively, the white asparagus in this meal tasted so much better than the first ones I've tried. They were tender and complemented the goats cheese. The addition of the ham was an excellent touch to the meal.

On the flip side, my mom and sister tried the authentic toast Skagen, which is essentially a piece of toast with fresh prawns smothered with dill and mayonnaise on top. My dad had the moules / mussels. I have tried samplings of all our appetizers, and all were very delicious.

Onto mains. I had the "grown up" version of the fish and chips (by grown up, I mean it's not from the kid's menu). Needless to say, the presentation was so cute! The fries were served in a mini version of the baskets you use for the deep-fryer. Also, the dish was served with curry remoulade and guacamole. 


By itself, the fish tasted quite plain. When combined with the curry sauce, the meal was more interesting. The remoulade turned the flat and plain flavor of the fish into an Indian, citron-y, enjoyable main course. Fries are fries, therefore it was good. A bit disappointed with my main... I hope that I stuck with my gut and chose the mackerel, but that's for next time.

My parents got the platter of assorted seafoods from the seasonal menu, with fresh seafood such as crab, fresh prawns, oysters, lobster and caviar. This was also served with sliced toasted bread.

For the first time in my life, I tried lobster. It was quite hard work actually to take off the meat, but it was great. I also enjoyed the slices of salmon served on the platter on bread, mixed with a tad of mayonnaise, caviar and some shredded onion. Delightful!

For dessert, I just had a plain old scoop of vanilla ice cream with almonds, serving as a nice little finishing touch to the meal.

Today was filled with trying out new different wonders of the sea. Lobster, mussels, toast skagen. These new experiences and firsts will be unforgettable, and more are surely to come!

EATS: {Recipe} How To Make Pizza Bread!

The {Recipes} are back! Euan, Patricia and Shriya are here to teach you some easy eats that you can do by yourself at home!

Before reading this one, you might want to try making three of the previous recipes:

The following is a recipe for pizza bread, a variant of the personal pizza I made in a previous {Recipe} post. We're going to make a quick, easy and effortless snack using common and simple ingredients. 

Speaking of ingredients, here they are:



- Slices of bread.
- Butter.
- Tomato Sauce.
- Grated Cheese. (Preferably mozzarella, but we used a Swedish cheese called Herrgård - Manorhouse cheese in English)
- Ham Slices.


Procedure:

1. Toast the bread until both sides are brownish. I just used a regular toaster for this step, but feel free to use anything you want. Do not heat the bread using a microwave. Hopefully, you know that microwaving bread makes it soggy and gross.

2. While the bread is still warm, apply butter. Don't put too much, you don't want your pizza bread tasting like your regular Sunday morning toast. Make sure that the butter will melt before you continue. (If you accidentally put too much butter or if the bread wasn't hot enough, put butter before microwaving the bread for a few seconds)

3. Put a generous amount of tomato sauce over the buttered slices of toasted bread. Next, place the grated cheese on top of the tomato sauce covered bread. Put as much as you want on the bread.

4. Preheat your oven at 120 degrees Celsius (~250 degrees Fahrenheit).

5. Top your bread with as much ham as you can. If you want, top it with more of your favorite pizza toppings. Pepperoni, bacon, pineapples, mushrooms, peppers... the sky is the limit! Just not anchovies though... they taste ughh...

6. Put them in the oven! Wait for about 7 to 9 minutes before taking them out.


7. It is very tempting to just get one now and munch, but wait! The ham and the melted cheese are very hot. I recommend waiting for about a minute before sinking your teeth into this simple delight!

Final (Delicious) Outcome:


That's it! This simple, simple dish can be made even by an eight year old, but can bring smiles and full stomachs to everyone! Comment down below what you want me or the contributors to make next!

EATS: Indian Guru

A while back, my family and I wanted to try something that we don't particularly like. Spicy food. We thought of going to an Indian restaurant for dinner, as spice is a trademark of Indian Cuisine. Not very far from our house is Indian Guru, a restaurant located in Vasastan, near Gustav Vasa Kyrka.

Me and my mom have a very negative relationship with spicy foods. My dad and sister on the other hand, love that kind of stuff.



We chose some papadam and aloo tikki as our starters. From my experience, I can describe papadam as a thin, flat, crispy sheet of goodness. I am a fan of salty foods, and the papadam was just that. It was served with a yogurt sauce with a hint of mango and mint blended into it. Unfortunately, the papadam was very oily when it got to our table, but that didn't hinder it's flavor. So far it was going great, I thought to myself.

Aloo tikki is a vegetarian dish mainly composed of potatoes. The faint taste of spice and coriander of the potato patties were accompanied by chutney. In comparison with the simple papadam, this to me ranks lower.

For mains, my mom and I got the chicken tikka masala while my dad got the lamb khorma. Both were not spicy, which does not agree with the main reason on why we wanted to go to an Indian restaurant. The chicken tikka masala was very good. The chicken tasted like chicken (which is surprisingly very uncommon. I'm talking about you Chicken McNuggets) and the sauce brought life to it. My dad let me try the khorma, and it taste quite the same as the masala, but it's a bit sweeter and creamier. The cashews added more texture to the dish.

We had our main dishes with paneer and garlic naan bread.

Paneer naan is a thicker kind of bread, made out of cornflower and something called maida, with an application of cottage cheese and a little spreading of butter on top. The paneer naan was incredibly creamy, delightful and amazing. I told Shriya, one of the contributors of the blog that I have been hooked on this thing ever since. However, the garlic naan was only describable by three letters. Meh.

To conclude our dinner, we had some kulfi, Indian-style ice cream with bits of coconut, made with cardamom and surrounded by blobs of mango syrup. My initial reaction after having a spoonful of the kulfi was that it was canned. There's no way that the chef could design the ice cream like that if it's as hard as a rock. It basically tasted like sweetened water, regardless if with or without the mango blobs.

Overall, I had a very pleasant experience at Indian Guru, and I would be willing to try again with spicier food. Wish me luck that my tongue won't burn.

EATS: Tabac Du Roule

First, I just wanted to comment on how small this restaurant was. Tabac Du Roule was literally footsteps away from our hotel, so we decided to give it a try. Back to its smallness, it housed maybe twelve people for the restaurant, a bar with a few seats and a cigar shop. Who needs anything if you have food, beer and something to smoke? (Disclaimer: Kids, don't smoke or drink. That's bad for your liver, lungs and people around you. The question before this disclaimer was a joke, I'm serious.)


Trying to stick with the theme of Frenh food, I decided to take a croque Monsieur (sandwich of cheese and ham) with fries and a light salad while my mom and sister respectively chose some entrêcote steak and and a hotdog with fries.

Upon receiving my sandwich, I gladly took a bite. The sandwich was very ordinary and it lacked ham. It lacked ham very much. I was clearly disappointed and unsatisfied with. Y choice.


I struck a deal with my sister to give me half of her hotdog (The hotdog was clearly a FOOTLONG, and the fact that my sister wanted a "light meal" made her a bit annoyed) as I offer her half of my sandwich.

Her footlong was surprisingly better than my sandwich... it was better by a MILE. 

My mom's entrecôte was great. She ordered it medium wit some fries, a salad and some sort of peanut sauce. She let my try the steak that had a char on it which I liked. I think that the steak was below my mom's expectation because she thought it was tough.


This restaurant was not a very good one. I wouldn't recommend it food-wise, but what do I know? Maybe they rank much better as a separate bar or a separate cigar boutique...

EATS: Hippopotamus Bar & Grill

Our first official meal in Paris was at the Hippopotamus Bar & Grill near Forum Les Halles. We were strolling around the area when we thought of having dinner, and we found this place! It seemed to have an inviting atmosphere from the outside. We were hoping to find good food here, to satisfy our first impressions of Parisian offerings.

Before going in though, we were very intrigued if they served real hippo meat. You might be on board with our thinking, believing that they do serve hippo meat, or you might be hysterically laughing now, thinking on how idiotic it would be to serve hippopotamus meat in a restaurant.


I decided to get some steak with fries and Béarnaise sauce. With mine medium rare, the steak was perfect (either that or it has been a while since I ate steak)! The fries were as crispy as can be and the sauce... I should tell everyone that I'm a sucker for Béarnaise sauce.... It's so awesome!


My mom got the same thing I had, except with a medium well steak, a baked potato and a sauce of sour cream and chives.

On the other hand, my sister settled for some chicken nuggets and fries... mmm? (Granted, it's from the kid's menu)


Onto dessert! I promised myself that our trip to Paris would be incomplete if we didn't savour crème brûlée! 



The burnt cream was served in a clay pot and was delightful. It was a shame that they didn't blow-torch the top... that would've made the dessert much more exciting to eat!

My sister had some chocolate mousse. She let me try a teaspoon-full and it tasted very bitter. I'm not a fan of dark chocolate (milk chocolate all the way!). I feel the same way on white chocolate. White chocolate just tastes... weird.

The Hippopotamus Bar & Grill gave me a positive first meal in France. The ambiance was very welcoming to children and adults alike. There wasn't that much people when we ate there, giving us a more comfortable experience. I would definitely recommend it. Très Bien!

POST ROUNDUP: The Bulgaria Trip {Feb. 2014}

That's it. Bulgaria posts are done and you had the opportunity to see my adventure skiing and eating in Bansko, the most popular skiing destination in Bulgaria.

So, here's another edition of Post Roundup, where I compile all my posts from a trip of mine. You can read my Dec 2013 - Jan 2014 PHILIPPINES trip Post Roundup HERE.

Skiing At Bansko (Bunderishka Polyana and Chalin Valog) - My first time skiing was on Bunderishka Polyana, an easy slope literally next to Banderitza (a hard slope). We also went onto Chalin Valog, another easy slope but is much more fun than Bunderishka. 


Skiing At Bansko (The Ski Road) - The Ski Road is a 6.3 kilometer path made for skiing from just south of Bunderishka, crosses Chalin Valog to the main town of Bansko. Pros of skiing here: very calm and relaxing and you get to enjoy a beautiful scenery. 

EATS: Bansko's Mexana Restaurant - Tender and juicy bacon, a salad with all sorts of yummy goodness, and a crazy man that welcomed us and let my sister and our friend carry bunnies inside the actual restaurant.


EATS: Euphoria Bar & Grill - Valentines Day was celebrated with a risotto of chicken, arugula and buckwheat and a tasting plate of five scoops of ice cream with assorted flavors. 

EATS: Chateau Antique - An interesting looking castle on the outside was a fancy restaurant on the inside. Their tiramisu is a highly recommend!

EATS: Bansko's Chateau Antique

Our final night in Bansko and unfortunately, my dad was not feeling very well. He decided to stay home with my mom, and let my sister and I to have dinner with our friends. Here's what he missed out:


The exterior of the restaurant was a type of a castle, which interested me immediately. Once entering, it was a rather fancy looking restaurant with a bar and ornate decorations and paintings on the walls. We ate in the fanciest setting I could have imagined; a part of the restaurant which was perfect for a huge round table, set up flawlessly. The only thing missing was the president to step in and join in on our dinner.



Since we had a snack earlier (Tip: Do not buy any street vendor pizza in Bansko. You can pay 2 Lev for bread at the supermarket that has the same taste.), my sister and I chose the lightest appetizer, a small pizza (again?!). It looks like a pizza, but it was garlic bread. 

The garlic bread was not up to par with my expectations. My first slice of the home-baked bread was bitter... and all was revealed when I flipped the bread over: it was burnt. 


I opted for a pasta dish for my main. Above is a ricotta and spinach stuffed ravioli with mushroom and walnut sauce. The pasta didn't have the spinach and ricotta taste, but the sauce made up for it by giving it the body that it needs. I am also a big fan of mushrooms, where it and the cream made a satisfying duo. The walnuts gave it an unusual texture, but did not do much besides that.


The final dinner before we go back to Stockholm concluded with tiramisu. The tiramisu gave this "okay" meal a delightful finish. The ladies fingers were covered with that lovable coffee taste, and the cream tastes very good... I wish there was more lady fingers though.

EATS: Euphoria Bar & Grill - Bansko

It was Valentine's Day when we ate at the Euphoria Bar and Grill at the town of Bansko. It is a restaurant offering a rather large selection of food, ranging from pizzas, pastas, Kid Menu-style and even Chinese food. Euphoria also features a bar and is great if you're a fan of food and watching sport.

My experience here was also filled with a two "firsts". First time tying risotto and first time trying hummus.



This night was kicked off by some salad and homemade hummus. So, this was my first time trying hummus and I knew from that first taste that I wouldn't try hummus again very often in my life. It had much more "depth" when spread with the bread, but it's still... "eh". 

For my main course, I chose the arugula, chicken, quinoa and buckwheat risotto. Again, something to check off the "something I have eaten for the first time" list. However, the risotto disappointed me. Just like the hummus, it was very dry and flavorless. As a Filipino, I can say that the rice wasn't of best quality. Trust me, a majority of my life consisted of eating rice for three meals a day. I KNOW what good rice is, and this risotto was surely not it.



My sister had fries and chicken nuggets from the children's menu, while the adults had a variety of foods from the separate Chinese Options menu.

After a long debate with my mom if we should go order dessert or not (as we bought some ice cream from the supermarket), we saw an option that might suit me and my sister. For dessert, we got a tasting plate of homemade ice cream, one scoop for each of the five presented flavors.



My sister and I tried our best to identify the flavors of the ice creams because the waiter and the menu did not tell us what the flavors were. The first one we tried (on the far left of the plate to the right). After a small nibble, I claimed it was pistachio while my sister thought it was mint. The second one was a bit weird because it tasted very... unusual (Spoiler: We think it's Cookies and Cream). The third one was an obvious chocolate. The fourth one urged another debate between me and my sister: I believed it was rose (I've never had rose ice cream, but I would imagine this would be its taste), she believed it was strawberry. The final one was caramel. 

In summary, our experience here in Euphoria was a bit of a mix of highs and lows, with the lows coming mostly on the food and the highs from the restaurant's amazingly comfy atmosphere. We spent dinner watching the Sochi Olympics' ice hockey battle between Norway and Canada (Canada won..) and talking to some great friends. Our friends seemed to have enjoyed both the food and the company, so maybe I just picked the worst things on the menu. Who knows? The only way I could is to go back and try again *wink*.

EATS: Hippopotamus Bar and Grill

Our first main meal in France (I don't know if you consider McDonald's something "main", but you get what I'm saying) was at the Hippopotamus Bar and Grill near Les Halles.



We were actually intrigued before going Ito the restaurant, frightened about the fact that they actually serve hippo meat, but we were quickly relieved upon spotting an English menu. My petite knowledge of French helped, but I still couldn't quite understand most of the foods.

After ordering, the kind lady that attended us served us a basket of bread and a bottle of water as complements. The bread was hard on the outside... Shame they didn't serve us some butter with it.

My sister opted for the children's menu. She got some chicken nuggets and French fries (see what I did there?) for her main course. 


My mom and I went for the Hippo Steak (Pardon me if that's not what it was called), which was NOT made of hippopotamus meat. I ordered mine medium with fries and Bernaise while my mom ordered hers medium well with a sour cream baked potato and barbeque sauce.

The steak was beautifully cooked, much better than in Jensen's Bøfhus back in Stockholm. The Bernaise was okay, but it wouldn't be something worthy of a highlight. Fries were good: not too crispy and not too covered with oil.

 

Something good about our deal was that everyone got dessert. My sister wished for a chocolate mousse and my mom and  I went for a Frenc classic: creme bruleè.


Our overall experience in this restaurant has been very pleasant.

I remember our first two weeks in Sweden where we had lunch at TGI Friday's near Kungsträdgården and how this ranked better than that. The Hippopotamus Bar and Grill is definitely a recommendation, 8.5 out of 10.

EATS: Bansko's Mexana ("Bunnies !")


It had dawned upon me that this whole time we had a trip to Bulgaria that we only stayed in one location, the town of Central Bansko. One night, we went out and went out of Central Bansko, towards its equivalent of Stockholm's Gamla Stan, the old town. 


After some ten minutes of walking, we have arrived. We were immediately greeted by a man with a crazy looking outfit, overseeing rabbits above a sign infront of the restaurant. This man was very friendly, he even let my sister and our friend, Talia to take the rabbits inside the restaurant... thus the affectionate term for this restaurant has been born: "Bunnies".

The adults had a long and uneventful discussion about which kind of wine to drink before we ordered appetizers.

Tonight's appetizer: salad with onion, tomatoes, coleslaw, cucumbers and goat's cheese. I liked this dish because of the different tastes you get when you mix and match the different elements of the dish, and that cucumbers are my favorite. 


Onto some mains! The first one was some veal shanks with roasted potatoes. The veal was tender and satisfying, but was much more impressive when combined with the potatoes. Sadly, no photo.

We also had chicken, bacon and beef with vegetables, actually cooked in a ceramic pot! The bacon was very, very delicious (I actually finished them all). The chicken was also a highlight of this dish.


Finally, dessert. Something I see a lot in menus of restaurants here in Bulgaria is the yogurt, so I decided to try some frozen yogurt with strawberry jam. Prior to this, I have been a fan of yogurt, and this just raised my obsession even more. The jam was on the top of the yogurt, so a good mix was done before I took my first bite. It was heaven! Simply delicious.

EATS: The Original Swedish Frozen Yogurt Factory

The Original Swedish Frozen Yogurt Factory can be found in Gallerian, a mall near Stockholm's Central-Station.

What I had was a fat and sugar free strawberry yogurt with chocolate cream and coconut bits and Kex Chocolate halves. Clearly, I made up my fat and sugar with the candy toppings I had.


It was delightful. The yogurt had the strawberry taste I craved, and the crunch of the toppings mixed very well. 

My sister had this sizable monster of yogurt with fat and sugar. Chocolate and vanilla yogurt with sprinkles:


With a price of 20 Crowns per 100 grams, I think it's reasonable. Quick bite!

THE SURPRISE!


So before I spill the deets, I just wanted to say that I spent some time thinking about this and I thought it would be good both for the blog and for themselves.

THE SURPRISE: Introducing The Co-Authors! 

I (Euan) will still be owning the blog fully, and managing a larger part of the blog than the co-authors. I feel like I'm only sharing my experiences here, and I think letting other people share theirs is a good way for them to publicly share thoughts and for you to get an insight to what other people are thinking. 

Of course some readers may dislike this motion, but keep in mind that I'll still be posting mostly. In fact, the plan we're having now is to have 2 days for two separate co-authors to post per week, with the remaining five days for me. So you won't really miss me that much *grin*. 

Please also keep in mind that this is still in the dry run / practice stage. My original plan is to test this out for two months and see if a majority of people like it.  

Most importantly, I want to thank all of you who are reading and supporting the blog. It means so much more than you can imagine for people like you to read my blog. I hope you will still continue to read and support it, with this major renovation coming up. 

You might get to know to authors at a later date.

EATS: Hemma Vasastan


Hemma Vasastan is a restaurant literally about sixty feet within our apartment in Odenplan. 


The restaurant seemed pretty calm on the outside, but the things completely changed after a step through the front door.

30 to 50 people were crowded near the restaurant's entrance, where the pub is, talking and shouting, watching a football match of some sort. That immediately changed my perspective.

Fast forward onto our appetizer: garlic bread with mozzarella and chili aioli. I don't quite know why I'm a sucker for garlic bread. It's just so good! It tastes even better with the mild aioli. Just perfection.


Main course: Biff Rydberg with mustard cream. Beef Rydberg is one of my most favorite meals EVER and they manage to keep the meal my favorite. I ordered the meat medium (as always), and it came with potato and roasted onions and an egg yolk. Definitely one of the best dishes I've ever tasted. Mustard cream was gross for me. Eew.

Generous portions!!!

Finally, a three tier sorbet to finish off the dinner. Admittedly, the sorbet was plenty, and consisted of mango, strawberry and green apple. Not that sour, but it was a great dessert nevertheless.


My dad, mom and sister had cheese and crackers, a generous portion of ice cream with Bailey's topping and chocolate truffle for their desserts.

This has been an amazing experience, and I would definitely go back if we had the chance.

Group Bonding at the Alabang Town Center  - It has been five, almost six, months since I've seen the people which I normally see every weekday, so it was awesome to spend a day with them at the mall and arcade we love!

EATS: Conti's Bakeshop & Restaurant (Greenbelt)  - After the scrumptious scrambled eggs served with my tapa and the clubhouse sandwich with French-bread, Conti's really proved to me that they serve the best cakes ever.

The University of the Philippines  - It's been four years since I've been here, and it's really great to see the Oblation and the Sunken Garden again.

EATS: Love Desserts -  A buffet of ice cream, pastries, chocolate mousse and peach cream in shot glasses and cakes all for PHP 199 (~ $ 4.50). Experienced with an awesome bunch of travellers too, this has been one of the most unforgettable experiences in the Philippines ever!

Jollibee  -  Probably one of the most iconic things in the Philippines. No trip to Manila is complete without experiencing Jollibee, a fast food chain that offers a range of hamburgers, fried chicken and even pasta, for a very affordable price.

The Filipino New Years   -   Experiencing the replacement of the old year to the next year is incomplete in the Philippines without knowledge on some of the superstitions we Filipinos follow, like jumping at the stroke of midnight and those 12 round fruits. 

Festival Supermall   -   One of the popular malls in our area is undergoing a "facelift like no other", where it will expand its area to accommodate much more shops and restaurants and attract loads more people. 

Greenbelt Mall  - Another Philippine mall that offers a wider range of boutiques, shops and clothing stores, all of which may be a pure Filipino brand, or one of the more internationally known brand. Greenbelt Mall also has a chapel, and features numerous food stalls and eateries. 

Street Food @ UP  -  Street food has been a part of Philippine neighbourhoods for as long as I can think of. It features a bicycle with an attached cart filled with cooking needs and even a stove!

EATS: Starbucks at the Greenbelt  -  It's Starbucks. Let it speak for itself.
